Join us for a dinner celebrating the young chefs and the future of culinary scene in Finland!

Starter Pop Up is an opportunity for young chefs to showcase their skills and vision in a two day long pop up. The chef for each pop up is chosen via competition, where contestants get to create their own tasting menu around a theme.


The chef for the third Starter Pop Up is Joona Laamanen from Ravintola Vinkkeli!

He is preparing a menu themed "Grandma's"!



The head bartender of A21, Timo Siitonen, will create flavour paired cocktails for the menu. Through these cocktails you get to know a different way of pairing food and drinks!

Amuse bouche


Gooseberry and rosemary marinated herring, rye cookie, puffed rice, fresh apple


One of the first memories from my childhood is oddly herring, since it was always served on the dinner table.

My grandmother is from Karelia so I also wanted to put Karelian pasty on the menu.


Smoked whitefish röra


Malt bread, dill mayonnaise, lemon


My grand grandmother lived in Naantali, where I spent my summers and I still remember the smell of summer sea. And my godmother used to bring smoked whitefish and malt bread, that we enjoyed every evening. That's why I wanted to bring the smell of bread, sea and smoke, which I think are the most important memories of grandmother.


Karelian hot pot


Terriini Iberico & oxtail, black pepper bay leaf mayonnaise, pickled carrot, marinated red onion, crispy potato


My grandmother's Karelian hot pot was often present in my childhood and undoubtedly it was a part of every Finns childhood memory. Everyone has their own experience and opinion and here is how I see this Finnish classic.


Summer soup


Creamy vegetable broth, domestic potato, fresh peas, pickled radish, roasted cauliflower, mini zucchini, pickled onion, red vein sorrel


As a child I didn't like summer soup, however as an adult I've learned to like it, or even love it. My grandmother used to serve it during summer and although I hated it, the plate was always finished. All the ingredients came from near, from our garden, from neighbors, from friends and if something was missing, you can always get it from market.


My Australian grandma's BBQ


Roasted heart salad, portobello ketchup, grilled lime, BBQ red wine sauce


My grandmother moved to Tewantin, Australia, in 1999 and this autumn I'm traveling for the first time to see her. Barbeque is a major part of Australian culture, as well as grilling in Finland and Australian beef is one of my favorite ingredients.


Grandmother's blueberry pie


Blueberry white chocolate namelaka, white chocolate crumble, yoghurt sherbet, spruce sprout oil, blueberries


My grandmother's late-summer blueberry pie was my favorite childhood pastry. After a long day of blueberry collection, grandmother's classic bun dough and lattice pattern pie was the best reward. And if the craving for blueberries was getting too hard, I would get some blueberry milk, that way later I became fond of blueberry-yoghurt combination.
